Zucchini Pizza Canoes Ingredients

  • 6 medium zucchini about 2 1/2 lbs
  • 1 Tbsp olive oil
  • salt and black pepper to taste
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1 cup pizza sauce store-bought or homemade
  • 1/3 cup parmesan cheese finely shredded
  • 2 cups mozzarella cheese shredded
  • 1/2 cup mini pepperoni slices
  • 2 Tbsp fresh basil chopped

Instructions
 

  • Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  • Slice each zucchini in half lengthwise and scoop out the seeds to create a canoe shape.
  • Brush the zucchini with olive oil and season with salt, pepper, Italian seasoning, and garlic powder.
  • Roast in the oven for 10 minutes to soften.
  • Spread pizza sauce in each zucchini boat, then top with parmesan, mozzarella, and mini pepperoni slices.
  • Return to the oven and bake for another 10-12 minutes until cheese is melted and bubbly.
  • Garnish with chopped fresh basil before serving.

Notes

You can swap the mini pepperoni for your favorite veggies to make these even more colorful and healthy!
