Instructions
Preheat oven to 400°F. Line a baking sheet with parchment paper and lightly spray with olive oil.
In a bowl, mix together the ground chicken, cheddar, parmesan, garlic powder, onion powder, paprika, salt, and pepper.
Set up a breading station with beaten eggs in one bowl and panko in another.
Shape the chicken mixture into small nuggets. Dip in egg, then coat with panko.
Place nuggets on the baking sheet and spray lightly with olive oil.
Bake for 18–20 minutes, flipping halfway through, until golden and cooked through.
Notes
Try hiding a cube of cheddar inside each nugget for a melty surprise. Serve with honey mustard or ranch for dipping.
