Instructions
Bring a large pot of salted water to a boil. Add the macaroni and cook until al dente. Drain and rinse with cold water. Let cool completely.
In a large bowl, combine celery, red onion, and grated carrot.
In a separate bowl, whisk together mayonnaise, mustard, vinegar, sugar, salt, and pepper until smooth.
Add the cooled pasta to the vegetable mix. Pour the dressing over and stir gently to coat all the pasta evenly.
Cover and refrigerate for at least 2 hours to allow flavors to meld. Stir before serving and adjust seasoning if needed.
Notes
This salad is best made a day in advance. Stir in a splash of milk or extra mayo before serving if it thickens while chilling.
