Ingredients
  

Main Ingredients

  • 16 oz macaroni pasta 1/4-inch tube shape
  • 1 cup mayonnaise
  • 2 tbsp mustard yellow or Dijon
  • 2 stalks celery finely diced
  • 1/4 red onion finely diced
  • 1 carrot grated or finely diced
  • 1 tbsp apple cider vinegar
  • 1 tsp sugar
  • salt and black pepper to taste

Instructions
 

  • Bring a large pot of salted water to a boil. Add the macaroni and cook until al dente. Drain and rinse with cold water. Let cool completely.
  • In a large bowl, combine celery, red onion, and grated carrot.
  • In a separate bowl, whisk together mayonnaise, mustard, vinegar, sugar, salt, and pepper until smooth.
  • Add the cooled pasta to the vegetable mix. Pour the dressing over and stir gently to coat all the pasta evenly.
  • Cover and refrigerate for at least 2 hours to allow flavors to meld. Stir before serving and adjust seasoning if needed.

Notes

This salad is best made a day in advance. Stir in a splash of milk or extra mayo before serving if it thickens while chilling.
