Ingredients
  

Crust

  • 1 cup unsalted butter softened
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar

Filling

  • 8 oz cream cheese softened
  • 1/3 cup sugar
  • 1 large egg
  • 1/2 tsp vanilla extract

Topping

  • 1 can peach pie filling (21 oz)

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish or line with parchment.
  • In a bowl, cream butter and sugar. Mix in flour until crumbly. Reserve 1/2 cup for topping. Press the rest into the pan.
  • Bake crust for 10 minutes. Let cool slightly.
  • Beat cream cheese, sugar, egg, and vanilla until smooth. Spread over cooled crust.
  • Top with peach pie filling. Sprinkle with reserved crust mixture.
  • Bake 25–30 minutes until lightly golden. Cool completely, then chill 1 hour before slicing.

Notes

For a fall twist, swap peaches for apple pie filling and add cinnamon to the crust mixture!
